- Flour: All-purpose flour is used in the recipe. The flour can be subbed for other flours such as a gluten-free flour, bread or whole wheat. These substitutions will change the bread drastically and you’ll have to make some adjustments that I have not tested myself. It’s recommended to stick with all-purpose flour for the best results following the recipe. For a gluten-free option, I do have an oat flour banana bread recipe.
- Butter: Unsalted butter will be listed but I prefer using the salted butter in my personal snickerdoodle banana bread recipe. If you’re sensitive to salt, always use unsalted so you can control the salt levels better.
- Egg: There is only one egg used in the recipe. The recipe can be made eggless because bananas have a natural holding power. The bananas themselves will hold the bread together but using the egg does help with a softer crumb and more bounce in the rise when the banana bread is baking.
- Milk: Any milk can be used in the recipe but my go-to milk is always whole milk. The milk simply thins out the batter a little which is why any milk will be fine.
- Bananas: Ripe bananas are the best option. Green bananas are a bit too starchy. Below, I’ll include a tip to quickly ripen your bananas if they are green.
How To Make Snickerdoodle Banana Bread
- Line the loaf pan with parchment paper, then sprinkle half the cinnamon and sugar mixture in the bottom of the loaf pan.
- Mashed the bananas and mix them with the other wet ingredients. Sprinkle in the dry ingredients and mix everything together until it’s just combined.
- Pour the batter in top of the cinnamon sugar mixture in the loaf pan. Then, sprinkle the remaining cinnamon and sugar mixture on top of the snickerdoodle banana bread.
- Place the banana bread in the oven and bake until the center is cooked through.
- Allow to cool completely before removing from the loaf pan and slicing.
Chef’s tip
- The parchment paper is a great tool to lift the bread out of the loaf pan. However, do not lift it out too early or too fast when removed from the oven. Even if you bake the snickerdoodle banana bread perfectly you can destroy everything moving the hot bread too fast. At the minimum, allow the bread to sit in the loaf pan for 20 minutes before lifting it out of the loaf pan.
How to ripen bananas quickly?
There are a few tricks and one is tossing them in a bag with an apple. Seal the bag and the gases between the two will speed up the process. You can do it without the apple as well.
Another option and the quickest is baking the bananas in the oven. Bake them at 300F for 15 minutes on a lined sheet pan. Once they are black, remove from the oven and allow them to cool before mashing.

Snickerdoodle Banana Bread
Equipment
- 8×4 loaf pan
Ingredients
Wet ingredients
- 1 cup banana (mashed)
- 3/4 cup brown sugar
- 1/2 cup vegetable oil
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
Dry ingredients
- 1.75 cup all-purpose flour (219g)
- 1.5 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Cinnamon sugar mixture
- 2 tablespoon granulated sugar
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350℉.
- Mash the measure out a cup of the bananas. Then, mix together the rest of the wet ingredients. In another bowl, mix together the dry ingredients then combine the dry and wet ingredients.
- In a lined loaf pan, sprinkle half the cinnamon sugar mix in the bottom. Then, pour the batter on top. Lastly, add the rest of the cinnamon sugar mix on top of the batter, then place in the oven.
- Allow the banana bread to bake for 40-45 minutes or until you can insert a toothpick or knife in the center and it comes out clean.
- Remove from the oven and allow to cool completely before slicing and serving.
