How To Make Banana Oatmeal Cookies

Tips, where it can go wrong
I have made these my go-to snack personally. After leaving keto and reintroducing carbs I truly love these. Here is the main thing I have seen with this recipe that can make it a bit different than you’d expect.
Pay attention to the thickness of your batter. I am not sure if it’s the water content in the bananas or the egg volume that changes but sometimes the batter is a bit loose. You do not want a runny batter. You should be able to form it a bit with your hand.
Now, I am not saying roll it into a ball. But, it should be pliable and not runny. If you see the batter be a little runny, add in more oats about 1/4 cup at a time. Allow it to sit 5 minutes before adding more. You should have to mold the cookies when you put them on the sheet pan, but not so thick you can roll a ball with the dough.

- Preheat the oven to 350F.
- Next, mash the bananas in a bowl. Then, whisk in the egg, honey and vanilla. Lastly, fold in the salt, chocolate chips and the quick oats.
- As mentioned in my tips, the batter should be somewhat thick, but not so thick you can barely get a spoon through it. Or so thick you can roll a stiff ball like normal cookie dough.
- Take a cookie scoop of the dough and place it on a lined sheet pan. Form the cookie with your hands and flatten it as well. Make all the cookies on the sheet pan then place in the oven for 12 minutes. They’ll brown on the bottom, you won’t be able to tell on the top as much.
- After removing them from the oven, allow them to sit and cool completely before serving. If you pick them up too fast they are likely to fall apart.
