Pumpkin Oatmeal Bars

Jump to Recipe

Pumpkin oatmeal bars are a great way to sneak in some whole oats in a flavorful way. Perfect during the fall weather these double as a quick breakfast treat or light dessert.

Recipe Highlights

  • How they taste: Pumpkin oatmeal bars are not overly sweet. They are exactly what they say they are in the context of texture. It’s an oatmeal bar! There are pumpkin spices in every bite and you can taste the pumpkin and see it in every bite as you break the bars apart to eat.
  • Skill level: A super easy bar recipe. To make the pumpkin oatmeal bars a beginner baker will have no issues. You mix all the ingredients the recipe calls for, place it in the baking pan then bake, nothing more, nothing less.
  • Storing: I would not leave these on the counter past the first or second day. They will become a bit harder in the fridge but it’ll extend there shelf life much longer.

Ingredient tips

  • Oats: The pumpkin oatmeal bars uses whole rolled oats. That’s the only ingredient you should see on the package. I have not tested them with quick oats but those could work as well. The variation of the quick oats will require a few tweaks so I suggest testing the recipe first with the ingredients it calls for.
  • Pumpkin: You do not have to squeeze out the excess water from the pumpkin. The oats will handle that. To add, there are two types of pumpkin on shelves. Pumpkin and pumpkin pie filling are the two options. In the situation you confuse them, the pumpkin oatmeal bars will still turn out just fine. The pumpkin pie filling has spices and sugar added versus pure pumpkin that has nothing added.
  • Milk: You can get away with swapping the milk for a nut-milk or anything else.
  • Nuts: I suggest you not skip the pecans. If pecans aren’t your thing, walnuts or any other nut you enjoy is a great option. You can even use the variation of adding chocolate in place for the pumpkin oatmeal bars.
