  • Oats: The pumpkin oatmeal bars uses whole rolled oats. That’s the only ingredient you should see on the package. I have not tested them with quick oats but those could work as well. The variation of the quick oats will require a few tweaks so I suggest testing the recipe first with the ingredients it calls for.
  • Pumpkin: You do not have to squeeze out the excess water from the pumpkin. The oats will handle that. To add, there are two types of pumpkin on shelves. Pumpkin and pumpkin pie filling are the two options. In the situation you confuse them, the pumpkin oatmeal bars will still turn out just fine. The pumpkin pie filling has spices and sugar added versus pure pumpkin that has nothing added.
  • Milk: You can get away with swapping the milk for a nut-milk or anything else.
  • Nuts: I suggest you not skip the pecans. If pecans aren’t your thing, walnuts or any other nut you enjoy is a great option. You can even use the variation of adding chocolate in place for the pumpkin oatmeal bars.

  • 8×8 baking pan

Ingredients
 

  • 2 large egg
  • 1/2 cup canned pumpkin
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 2 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cup whole rolled oats
  • 1/2 cup pecans (chopped)

Instructions
 

  • Preheat the oven to 350℉.
  • To start, mix the eggs and the canned pumpkin together. Then, add in the vanilla, sugar, pumpkin spice, salt and milk until everything is even.
  • Now, fold in the oats and the pecans.
  • Place the bars into a lined baking pan and pat it down so that the top is flat. Now, put the pan in the oven and bake for 25 minutes.
  • When finished, allow the oatmeal bars to cool before slicing and serving, enjoy.
