Keto tomato soup is a great low carb option for a healthy, fresh soup using roasted tomatoes. Homemade with fresh herbs, garlic and onion at only 2g net carbs per serving. Family and friends won’t be able to tell and you’ll never eat canned soup again.
I was never really into soups but all that has changed. My keto French onion soup started it all when I had the traditional version first. Sadly most soups contain some sort of thickener such as cornstarch, flour or using potatoes to help thicken it. Those things are a no go on keto but doesn’t mean you can enjoy a delicious keto tomato soup that will rival any soup out there!
Are Tomatoes Keto
Yes they are! I actually had someone address a recipe of mine saying tomatoes had too many carbs to be keto. This is false and a mistake new comers make but I understand. According to the USDA, 1medium tomato is only 3g net carbs each, does that sound like a ton? You’ll have no problem because 1 serving of this keto tomato soup recipe is only 2g net carbs which leaves you room to double or triple servings.
Is Tomato Soup Keto
Short answer, it depends! Most home cooked tomato soups will be just fine. Especially recipes found on the internet because you can see the ingredients. Some people like to add sugar but I don’t think it is needed, personally. But, when it comes to store bought stay away from them. There may be a few on the market such as Kettle & Fire that you can buy but the basic canned versions will have starch’s, flour and high carbs.
How To Make Keto Tomato Soup
To start, what makes this recipe special is the roasted tomatoes and garlic. Peel the garlic cloves then slice the tomatoes in half. On a baking sheet lay them out and drizzle all with olive oil then salt and pepper. Bake for 40 minutes.
Now, while those are baking sauté your onions on the stove top. Next, once the tomatoes and garlic are done in the oven pull them out.
Then, inside a blender add the tomatoes, garlic, onions and chop up basil, oregano then pour in chicken broth. Blend smoothly, now serve.
This recipe is that simple and easy to make!
Helpful Recipe Tips
- Use heavy cream, in place of the chicken broth swap for 1/2 cup of heavy cream to bring that creaminess into the recipe.
- Try with keto garlic bread!
- The nutrition facts are based off of using medium vine tomatoes. If you choose to go with a different variety the numbers will change as well.
