Keto tomato soup is a great low carb option for a healthy, fresh soup using roasted tomatoes. Homemade with fresh herbs, garlic and onion at only 2g net carbs per serving. Family and friends won't be able to tell and you'll never eat canned soup again.
Peel garlic cloves. Then slice tomatoes in half. Lay both garlic and tomatoes cut side up on a baking sheet. Drizzle with olive oil and add salt and pepper across. Bake for 40 minutes.
While garlic and tomatoes are baking sauté the sliced onion on your stove top with salt and pepper. Once caramelized remove from heat and sat to the side.
Once tomatoes and garlic are done remove then place in a blender. Add chopped oregano and basil leaves in. Pour in chicken broth as well then blend until smooth. Serve. I also have keto garlic cheese bread to add with it!

Use heavy cream, in place of the chicken broth swap for 1/2 cup of heavy cream to bring that creaminess into the recipe.
