Strawberry jam is classic and something I wouldn’t consider to be seasonal. This keto friendly, no sugar added version is to die for and made with a few simple ingredients. Topping my almond flour biscuits off with this is one of my new favorites. I show you step by step how to prepare and made this keto jam recipe super easy for you to follow.

How To Make Keto Strawberry Jam

Ingredients Needed

  • Fresh or frozen strawberries
  • Keto sweetener
  • Xanthan gum or Chia seeds

Making The Jam

First, get some fresh, beautiful strawberries preferably organic and dice them up into small pieces. Now, if you like a chunky jam cut them up much larger. You’ll also need to cut off the top green area and discard it for this recipe.

Next, what I suggest to do when making a keto jam is have all ingredients ready beside the stove. A granulated or powdered sweetener can be used here.

But, where things will differ is in how you choose to thicken the jam. Some bloggers use gelatin, chia seeds or Xanthan Gum. I stand by chia seeds and xanthan gum in my recipes because I believe it provides the best consistency.

In a saucepan, add your chopped strawberries in. If using fresh add about a 1/4 cup of water. If using frozen, you won’t have to add anything. On a medium heat, cook for about 5 minutes. You’ll notice while you stir the strawberries soften and the aroma begin to spread through your home of fresh cooked strawberries.

Then, remove from heat and add in sweetener and xanthan gum to the mixture. If using chia seeds, add those in now in place of the xanthan gum. If using chia seeds, allow it to sit in the refrigerator for a few hours or overnight to thicken.

Allow to cool, as the strawberry jam cools it will continue to get thicker and thicker.

Are strawberries keto?

There are many fruits you’ll have to give up when starting the keto diet but strawberries isn’t one. Berries are a great option due to having a sweetness, yet being naturally low carb. An entire cup of whole strawberries* is only 8g net carbs per cup! That’s a nice serving of strawberries and you’re still below the 20g net carb mark allowed on keto.

How do you thicken the jam?

In this keto strawberry jam you can use xanthan gum or chia seeds. Personally, I like xanthan gum because chia seeds bring a gel like texture that isn’t how natural jam is. But, they do work for thickening like in chia pudding.

Is sugar-free jam keto friendly?

Yes it is! That is the lovely thing about strawberries, raspberries, blackberries and blueberries. They all are low in sugar and work great with breakfast recipes!

How long does sugar-free jam last?

Store bought jam has all types of preservatives in it to make it last months. When using a homemade jam recipe that is much different. This sugar-free strawberry jam will last until the strawberries go bad which is normally less than a week. But you can freeze it, just note the texture may be a little different once thawed but taste should be the same.

Ingredients
 

  • 200 grams fresh or frozen strawberries (equivalent to 1 cup)
  • 3 tablespoon keto sweetener
  • 1/4 teaspoon xanthan gum (sub for 1 TB chia seeds)
  • 2 tablespoon added water if using fresh strawberries only

Instructions
 

  • Chop of strawberries into small pieces. Doesn't have to be micro, just small pieces and remove the green leafy tops if using fresh strawberries
  • In a bowl mix sweetener and xanthan gum together to prevent possible lumping. If using chia seeds just replace with the xanthan gum in the sweetener. See notes.
  • In a small pot on medium heat add strawberries. Once they start to cook and you notice bubbling in the water, cook for 5 minutes after that. Then remove from heat
  • while stirring add in sweetener and xanthan gum mix and continue stirring until noticable thickening
  • Allow to cool and serve
