Make this homemade strawberry jam that's keto friendly with no added sugar. Made from fresh strawberries and better than any store bought version with fewer ingredients. Add to any keto friendly breakfast and top off your favorite gluten free biscuit recipe!
200gramsfresh or frozen strawberries(equivalent to 1 cup)
3tablespoonketo sweetener
1/4teaspoonxanthan gum(sub for 1 TB chia seeds)
2tablespoonadded water if using fresh strawberries only
Instructions
Chop of strawberries into small pieces. Doesn't have to be micro, just small pieces and remove the green leafy tops if using fresh strawberries
In a bowl mix sweetener and xanthan gum together to prevent possible lumping. If using chia seeds just replace with the xanthan gum in the sweetener. See notes.
In a small pot on medium heat add strawberries. Once they start to cook and you notice bubbling in the water, cook for 5 minutes after that. Then remove from heat
while stirring add in sweetener and xanthan gum mix and continue stirring until noticable thickening
Allow to cool and serve

Helpful Recipe Tips
Use xanthan gum or chia seeds, this recipe is to use one or the other to thicken the jam. Do not use both. Xanthan gum will thicken almost instantly where chia seeds will thicken over time.
Fresh or frozen strawberries, either will work but note that if using frozen you can chop them up. But, they will soften and cook down in the cooking process.
Store keto strawberry jam in the refrigerator for 5-7 days after making. There are no added preservatives so the jam won't last a long time.
