  • Flour: Yes, it says bread but you are not using bread flour for this recipe. Amish cinnamon bread is more of a dessert than bread itself with a cake-like texture and crumb. All-purpose flour has a lower protein count which allows a softer texture. I would not recommend switching the flour to anything else for texture purposes.
  • Buttermilk: This pairs with the butter for not only flavor but texture. Buttermilk packs a different flavor and a much thicker texture than milk. Milk can be subbed here but I have not tested it. I’m also positive this will effect the texture greatly and the flavor slightly.
  • Butter: Using butter here in the place of a neutral oil like vegetable oil gives Amish cinnamon bread its flavor. Oil can be used for the batter itself but I would recommend keeping the butter for the flavor in the topping.
  • Sugar: There is a mix of brown sugar and granulated. This is on purpose for the molasses flavor the brown sugar brings and the texture. But, granulated sugar helps with the sweetness in the recipe because brown sugar isn’t that sweet alone.

  • Line the loaf pan to easily lift the bread out. This makes clean up easier and not using the parchment paper doesn’t result in a better end result.
  • Allow the Amish cinnamon bread to cool before lifting it out of the pan. You can destroy a great bake by moving or manipulating the hot bread too quickly while it’s fresh out the oven.
  • The batter is naturally thick due to the buttermilk. This is normal, you do not need to smooth out the top. Leave it rugged looking so the butter can work its way into crevices and create that crispy topping.

How To Make Amish Cinnamon Bread

  1. Begin by mixing the wet and dry ingredients for the batter.
  2. Next, add half the batter into the lined loaf pan. Add half the cinnamon sugar mixture on top then give it a swirl with a knife. Now, add the remaining batter on top.
  3. Then, sprinkle the remaining cinnamon sugar mix on top then pour melted butter over the batter.
  4. Place the loaf pan in the oven and bake until the bread is cooked all the way through.
  5. Remove from the oven and allow to rest before slicing and serving.

Storage

This bread can be left on the counter top covered for up to 2 days, maybe more depending on the temperature in your home. The bread can also be kept in an airtight container in the refrigerator for up to 4-5 days as well. If you decide to freeze it, you can freeze it whole or in slices.

Equipment

  • 8×4 loaf pan

Ingredients
 

Wet ingredients

  • 8 tablespoon butter (melted)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (light)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk

Dry ingredients

  • 1.75 cup all-purpose flour (219g)
  • 1/2 teaspoon baking powder

Cinnamon sugar mix

  • 1/3 cup granulated sugar
  • 1.5 teaspoon cinnamon

Topping

  • 2 tablespoon butter (melted)

Instructions
 

  • Preheat the oven to 350℉.
  • In a two bowls, mix together the dry ingredients in one bowl. Then, the wet ingredients in the next bowl. Combine the dry and wet ingredients. To the side, combine the ingredients for the cinnamon sugar mixture.
  • In a lined loaf pan, add spoon in half the batter. Then, sprinkle half the cinnamon sugar mixture over the batter and use a knife to swirl it a little.Add in remaining batter then add the remaining cinnamon sugar mixture on top of that. Give the topping a little swirl with the knife as you did with the middle. Lastly, pour the melted butter on top but do not swirl in it. This creates the crispy topping.
  • Place the load pan in the oven and bake for 50 minutes or until you can insert a knife or toothpick in the center and it comes out clean. Because ovens vary, start checking the bread at the 45 minute mark.
  • Once the center is cooked through, remove from the oven and place on a cooling rack until the bread is completely cool. Once cooled down, lift it out of the pan, slice and serve!
