Pecan pie was a dessert I didn’t have to wait until the holidays. I could eat it year round without any issues. Although, I’m not a major pie love this keto pecan pie along with sweet potato and my keto pumpkin pie are my favorites. Now that I’m an adult I’d like to give blueberry another shot. Maybe for a cheat day who knows. Anyways, I wanted to make sure this pie had the gooey center but the secret to that is un using the right sweetener. I will add that in the notes below.

The Best Keto Pie Crust

Now, this isn’t a difficult choice to me because when it comes to a pie or cheesecake I normally scrape the toppings off. Yes, even in my own recipes. The crust can work but I am just far more interested in the filling instead of the crust itself.

Coconut flour, this is probably my favorite to use because it’s nut free. But, this pie crust requires a few extra steps such as the food processor portion. They are both equal when it comes to pressing them out. That can be a very time consuming process.

Almond flour, easily the most popular and let’s just face it almond flour is easier to use. It gets crispier, the butter flavor stands out more, it’s just plain good. Now, if you have nut allergies this isn’t the pie crust for you. In the photos I used almond flour.

How To Make Keto Pecan Pie

To start, you need to make the pie crust first. I have a choice between almond flour or coconut flour versions.

Now, to make the filling is very easy. In a medium pot melt one stick of salted butter. If you know how to make brown butter I recommend it but you don’t have to.

Next, add in both sweeteners, heavy cream and vanilla extract. Now, melt everything together then set it aside to allow it to cool. You need to do this because it really hot and would be a terrible idea to add the eggs in at this moment.

Then, check to see if it’s warm to the touch. You should be able to put a finger in without severely burning yourself. Beat eggs and pour into mix. Make sure everything is combined and smooth.

Next, pour filling on top of pie crust. You can pour on top of your pecans or sprinkle them over after pouring, it really doesn’t matter.

Bake in a preheated oven for 45-60 minutes. When you remove it, it’ll look inflated, which it is. If there is a slight jiggle in the middle that is fine. Remove and allow it to cool completely. If you can avoid digging in place in the refrigerator and allow it to set fully. I personally think this is a personal preference. In the photos the middle is set. I personally prefer a looser, messier filling myself. Seem to make the pie better in my mind.

Helpful Recipe Tips

  • All sweeteners are not created equal. In this recipe I used Besti brown sugar and allulose. Anything with erythritol will crystalize once it is cool. What this means is your pie “may” become a hard, crispy texture over being soft and gooey. I use Besti because it uses allulose. Swerve brown uses erythritol. Now, it can work but just make note of the changes that can occur.
  • Making brown butter, you don’t have to make it but it will help provide a nuttier flavor than just the brown sugar sweetener alone.
  • Add extra sweetness, I think for someone new or someone who like things on the sweeter side should add 1 teaspoon of liquid monk fruit or stevia to this. The sweetness is very light in this recipe for someone who doesn’t like super sweet things. This will be a personal choice of course.

Ingredients
 

Pecan Pie Filling

  • 8 tablespoon salted butter
  • 1/2 cup Besti Brown Sugar Sweetener
  • 1/2 cup keto sweetener (I used allulose)
  • 1/4 cup heavy cream
  • 3 large egg
  • 2 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions
 

  • Start by making the pie crust under the instructions of whichever you choose.
  • Preheat oven to 325°F
  • In a medium pot melt butter on medium heat. If you want brown butter do that now. If not add in heavy cream, both sweeteners and vanilla extract.
  • Melt everything together until smooth, remove from heat. Allow to cool to the point you can touch it without burning yourself but don't let it get cold.
  • Beat then pour in 3 eggs. Mix well.
  • Pour filling into pie crust. You can pour on top of pecans or you can sprinkle them over after you pour the pie filling.
  • Bake for 45-60 minutes depending on oven. Center can be slightly jiggly when you remove it. Allow to cool fully then cover and place in refrigerator to set. You can skip this step if you like you pecan pie even more gooey.

  2. Hi, me again. Can the pie be frozen? My plan is to make several in 5 inch pie plates. Also. would coconut cream work in place of the heavy cream?
