- Combine dry ingredients of almond flour, coconut flour, granulated sweetener, baking powder and salt.
- Mix wet ingredients of eggs, melted butter, liquid stevia or monk fruit, maple extract and sugar free maple syrup.
- Combine both dry and wet. Fold in 1/4 cup of chopped pecans. You can even add pecans as a crust along the top.

Keto Pecan Pie Muffins (Grain Free, Low Carb, Sugar Free)
Ingredients
- 1 1/4 cup blanched almond flour
- 2 tablespoon Coconut flour
- 2 tablespoon granulated sweetener
- 1/8 teaspoon Salt
- 1 teaspoon Baking Powder
- 2 large Eggs
- 5 tablespoon melted butter
- 2 tablespoon sugar free maple syrup
- 1/4 cup chopped pecans
- 1/4 teaspoon liquid stevia or liquid monk fruit
- 1/2 teaspoon maple extract
Instructions
- Preheat oven to 325ºF or if you don't have that setting go down to 300ºF
- combine dry ingredients of almond flour, coconut flour, granulated sweetener, baking powder and salt
- mix wet ingredients eggs, melted butter, liquid stevia, maple extract and sugar free maple syrup
- combine both and after add in 1/4 cup of chopped pecans. You can even add pecans as a crust along the top
- divide in 7 muffin cups and bake for about 20 minutes or until done. Can be tested by sticking a toothpick through center. If toothpick comes out clean muffins are done.

I don’t have maple extract. Can I substitute vanilla extract or just leave it out all together without affecting the end result?
Of course you can swap it out but it will have a vanilla flavor instead of a maple one that’s all
I noticed you said that pecans have 4 grams net carbs per ounce, but I googled the nutritional info for them, and there is really only 1.2 grams per ounce. They have 3.9g carbs, but 2.7g fiber. I believe to get net carbs you subtract the fiber, correct?

These Keto muffins were delicious! Even my husband liked them. This is definitely a keeper recipe. I like that it only uses two eggs. That way if I make half a batch, I can only use one egg.
