How To Make Keto Peanut Butter Balls-Step By Step

  1. Grab some sugar-free peanut butter. Some has salt added some don’t. If there’s no salt simply add a bit to the peanut butter. You will need it.
  2. Mix in cacao powder and cinnamon. These really make the peanut butter balls pop.
  3. Also, I used monk fruit instead of liquid stevia here. You can use either but I recommend monk fruit to avoid the aftertaste of stevia.
  4. This will make it form into a ball. Take a spoon or cookie scoop then removing small portions to roll into balls.
  5. Roll into Swerve brown sugar. Serve or place them in the fridge for later.

Helpful Recipe Tips

  • Monk fruit versus stevia which is better? I used chocolate flavored monk fruit in my recipe. Plain monk fruit is just fine but monk fruit doesn’t bring the aftertaste liquid stevia does. The thinner the consistency the more the aftertaste of stevia shows itself. Either works, but one is better than the other.
  • Coconut flour helps them be firmer, you can’t taste it and swapping out the coconut flour for almond flour won’t work.
  • Use room temp or slightly melted butter for the recipe. Cold butter will give you too hard of a time for mixing.

Equipment

Ingredients
 

  • 1/2 cup natural peanut butter (add salt if unsalted 1/4 tsp)
  • 3 tablespoon unsalted butter
  • 1/2 cup powdered sweetener
  • 1 teaspoon vanilla extract
  • 2 teaspoon coconut flour
  • 2.5 tablespoon Swerve brown sugar (link above)

Instructions
 

  • In a mixing bowl add in peanut butter
  • With a hand mixer beat in powdered sweetener, vanilla extract, butter and coconut flour.
  • Place in refriderator at least an hour. Remove and using a teaspoon or cookie scoop, scoop in hand and roll into balls. If they start to melt or get too soft place then back in the refrigerator before rolling in swerve brown sugar
  • After this I prefer them firmer out of the fridge but that's where you can store them. But you can eat them as soon as you are done rolling them if you choose.
