Mexican Street Corn Dip
Mexican street corn dip is a great appetizer or party food that quick to whip together. Everyone will love the blend of the flavors in this summer style dip.
Ingredients
- 1/2 medium yellow onion (diced)
- 3 cloves garlic (minced or pressed)
- 3-4 ears sweet corn (sub with 15oz can or 1.5 cup frozen corn)
- 6 ounce cream cheese (room temp)
- 1/3 cup mayo
- 1/3 cup sour cream
- 1 lime (squeezed)
- 1/2 cup cotija cheese (crumbled & more to taste)
- 1/4 cup cilantro (chopped & more to taste)
- 1 tablespoon chili powder
- 1 tablespoon smoked paprika
- salt & pepper to taste
Instructions
- To start, sauté the onion and garlic in a little oil until brown bits have form and the ingredients have softened. Prep the corn by grilling it so that it's a bit charred.
- Cut the kernels from the cob and sat to the side for later.
- Mix and cream together the cream cheese, mayo and the sour cream. The fold in the corn, onion, garlic, and the seasonings provide.
- Taste and adjust to your likings before serving.
