Quick tips before cooking
- Dice the potatoes small. You’ll want them to cook all the way through as soon as possible. This is the reason I recommend Yukon because they are not only creamy but they cook faster than russet potatoes.
- Cook in a pan that you can easily transfer to the oven. That will cut down on dishes and make this a one pan meal.

Southwest Ground Beef And Potatoes
Ground beef and potatoes with a delicious Southwest twist with beans, salsa and cheddar cheese all mixed together for a easy dinner recipe.
Equipment
- oven safe pan like a cast iron pan
Ingredients
- 1 pound lean ground beef
- 1 pound Yukon gold potatoes (diced)
- 15 ounce black beans (drained & rinsed)
- 1 ranch seasoning packet
- 1 taco seasoning packet
- 2 cup cheddar cheese (shredded)
- 4 ounce chunky salsa
Instructions
- Preheat the oven to 400℉
- To start, brown the ground beef in the pan on the stove top. Remove the ground beef from the pan when finished browning then add a little oil. Toss in the potatoes and spread them out in the pan then cover for about 5 minutes on a medium heat.
- Go back and check on the potatoes to turn them. Cover for another 5 minutes. After the time is up, add in the salsa, black beans, browned ground beef and half the cheese. Mix everything together then top with the remaining cheese.
- Place the pan in the oven and bake for 10-15 minutes to allow the cheese to melt.
- Allow to cool then serve and enjoy!
