Buttery keto english muffin straight from the microwave or baked in the oven then toasted to crispy goodness. This is a great keto breakfast idea when running short on time or a keto bread option when craving toast.
There is nothing like the classic English muffin in the morning with nooks and crannies but not with a keto version. Now, I’ll be honest and say the nooks may or may not happen but you can always toast it up into a nice buttery crust. You can bake in a small ramekin or make it in the microwave in a mug. The version you’re seeing in photos was baked in the oven.
Can You Eat English Muffins On Keto
No, a very popular brand sold in store has a whopping 24g net carb per muffin. The muffin alone is higher than the recommend net carbs per day on the keto diet. Yet, this recipe comes in at only net carbs per muffin.
How To Make A Keto English Muffin
In this recipe, I like the addition of yeast. Fast yeast will do nothing for rising or anything else without the presence of something to “eat” it’ll just help bring that flavor. If you wonder if yeast itself is keto I have a full post and video about it. It’s completely optional but it helps bring in that flavor more and cut down on any egg flavor.
To start, mix together almond flour, egg white powder, baking soda, water and butter or oil. I have tested with butter and oil and there isn’t a flavor change with either because the butter stands out so much after you toast it.
Mix all those ingredients together until you have a smooth batter. Just like the video on this page. You may have to add more water than what the recipe says. I have noticed it can go up or down.
Bake in a preheated oven in a 4 inch ramekin or microwave for 60 seconds. Next, you may have to run a knife around the sides to release. Then, slice and toast the muffin on the stove or in a toaster. I prefer the stove to really let it soak up that butter while it’s toasting.
A note, only the almond flour version has a crispy finish.

- How to store, this is a recipe for one so I can’t see a situation where you’d have to store it. But, if made ahead simple in a zip loc bag or storage container is fine. These can keep at least a week if not more due to the fact I use dried egg instead of a whole one.
- Can I use egg whites or a whole egg? I haven’t tested this yet. The egg white powder creates a bulking aspect that can’t be replicated with just egg whites by itself. If using a whole egg expect a very eggy flavor in the end especially if you don’t use the yeast. To mention, if using a whole egg there are some great food blogger that have worked out the proper measurements doing so and this may not be the recipe for you.
- Toast it, this is a crucial step in the recipe so I say don’t skip it. You can also create a keto jam such as in this strawberry version or with any fruit.

- 2 tablespoon blanched almond flour
- 1 tablespoon egg white powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon fast acting yeast (optional)

- 1 tablespoon coconut flour
- 1 tablespoon egg white powder

Instructions
Microwave Instructions
- Both recipes are to be made the same way. The nutrition info below is for almond flour only.
- Melt butter in microwave. Then add all ingredients into the most cyclinder mug you can find.
- If using an 1100 watt microwave you'll only need 60 seconds for it to be done. When done the top will be dry and the feel will be spongy. The sides of the bread will release from the sides of the mug most times. If it's still touching just run a knife to release it.
- Slice the bread with a bread knife and toast in a pan with butter. Watch closely because it browns quickly.
Baking Instructions
- Melt butter in microwave. Then add all ingredients into a ramekin and make sure it's smooth.
- Bake in oven for 15 minutes. Top will be firm and set when finish.
- You may need to run a knife around the sides to release it. Slice the bread with a bread knife and toast in a pan with butter. Watch closely because it browns quickly. Or use a toaster oven and butter afterward.
