This keto bacon and egg breakfast bowl can be the staple of your high fat recipes. Featuring fried cauliflower rice and onion. Made in less than 10 minutes!

I don’t think nothing screams breakfast more than the classic bacon and eggs. Surprisingly nothing screams keto more than bacon and eggs as well. Yet, the quick and easy breakfast combo can become repetitive and stale. Let’s spice things up shall we?

I brought cauliflower and onion into the picture. Not only that but a different method to how it’s cook. Changing your cooking methods can do wonders for you dishes. Texas barbecue is famous and most rubs are just salt and pepper.

Here I use the bacon fat in the pan to sauté the cauliflower rice. The cauliflower rice absorbs all the bacons flavor. Then, is topped off with butter to produce a slight creamy texture to the overall dish. We are talking a fat bomb breakfast. Who would’ve thought?

Are bacon and eggs keto?

Eggs are a powerhouse food, superfood as you may call it. Full of protein and omega-3 fats. Now, bacon is just delicious. The bonus side of bacon is it’s full of fat. There’s little protein and some brands have excessive amounts of salt. Beware of hidden sugars as well. But, the biggest thing with bacon is a serving of any brand is very low in carbs.

What is keto friendly bacon and where to buy it?

I find the best quality bacon can be found in a large number of choices from these stores.

  • Sprout’s
  • Whole Foods
  • Harris Teeter
  • Trader Joe’s

These locations will have keto bacon that’s uncured with little to no sugar added. Not to mention hormone free. On average the cheaper the bacon the lower the quality. But, there is some trashy bacon for high prices. Just make sure you read the nutrition labels and use your best judgement.

How to make an easy breakfast bowl:

  • Cut strips of bacon into pieces and slice onion up as well. Place frozen cauliflower rice bag in the microwave and drain excess water when it’s finished.
  • With the pan on medium high heat, begin to crisp bacon and after the bacon has released some fat into the pan toss in onions to caramelize.
  • Once bacon and onions have a great color to them toss in cauliflower rice. Season with salt and pepper. Then toss butter on top and continue to mix everything together.
  • Cauliflower rice will absorb all the bacon fat in the pan so no need to drain. Cook for about 3-5 minutes and remove from heat.
  • Scramble or fry your eggs however you like and top the dish off with them. Sunny side up seemed to work the best but scrambled is always super easy.

Helpful recipe tips

  • Microwave cauliflower rice first. Don’t place frozen rice into pan for all that excess water to get into your dish. Not to mention causing serious popping from the water and hot fat.
  • To add, drain the excess water by cutting a small slit in package and squeezing water out.
  • After adding cauliflower rice keep a eye on the pan because the rice will absorb the bacon fat quickly. You want to avoid burning the rice while adding the seasoning and butter.

Ingredients
 

  • 1 bag 10 oz. frozen cauliflower rice
  • 1/2 chopped onion
  • 4 strips bacon
  • 3 large Eggs
  • 1/2 teaspoon Salt
  • 1/2 teaspoon coarse black pepper
  • 1 tablespoon butter

Instructions
