Ingredients
 

Almond Flour Version

  • 2 tablespoon blanched almond flour
  • 1 tablespoon egg white powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fast acting yeast (optional)
  • 1 tablespoon butter
  • 2 tablespoon water

Coconut Flour Version

  • 1 tablespoon coconut flour
  • 1 tablespoon egg white powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon fast acting yeast (optional)
  • 1 tablespoon butter
  • 3 tablespoon water

Instructions
 

Microwave Instructions

  • Both recipes are to be made the same way. The nutrition info below is for almond flour only.
  • Melt butter in microwave. Then add all ingredients into the most cyclinder mug you can find.
  • If using an 1100 watt microwave you'll only need 60 seconds for it to be done. When done the top will be dry and the feel will be spongy. The sides of the bread will release from the sides of the mug most times. If it's still touching just run a knife to release it.
  • Slice the bread with a bread knife and toast in a pan with butter. Watch closely because it browns quickly.

Baking Instructions

  • Melt butter in microwave. Then add all ingredients into a ramekin and make sure it's smooth.
  • Bake in oven for 15 minutes. Top will be firm and set when finish.
  • You may need to run a knife around the sides to release it. Slice the bread with a bread knife and toast in a pan with butter. Watch closely because it browns quickly. Or use a toaster oven and butter afterward.

Notes

Helpful Recipe Tips

  • How to store, this is a recipe for one so I can't see a situation where you'd have to store it. But, if made ahead simple in a zip loc bag or storage container is fine. These can keep at least a week if not more due to the fact I use dried egg instead of a whole one.
  • Can I use egg whites or a whole egg? I haven't tested this yet. The egg white powder creates a bulking aspect that can't be replicated with just egg whites by itself. If using a whole egg expect a very eggy flavor in the end especially if you don't use the yeast. To mention, if using a whole egg there are some great food blogger that have worked out the proper measurements doing so and this may not be the recipe for you.
  • Toast it, this is a crucial step in the recipe so I say don't skip it. You can also create a keto jam such as in this strawberry version or with any fruit.
