Keto breakfast muffins are great meal on the go that’s packed with protein. Cheesy, creamy egg and any meat from sausage to bacon or ham this easy to make recipe is something that remains healthy, yet delicious to the entire family!

Egg muffins and breakfast muffins on keto are super fun. They are very custom to how you feel at the time and personal taste. In these, I went with sausage due to needing a little spice in my life. Adding ham such as in my spinach quiche is a great option or sautéed onions and bacon in this quiche really stand out. This make ahead recipe or something fast on a weekend or week day morning will shock you how simple it is.

In these days you have tons of options. From frozen waffles in the grocery store, even pancake mixes that you can buy. Things such as breakfast casseroles, there are tons of options. A simple bacon an egg breakfast bowl won’t steer you wrong as well. Craving oatmeal? Hot cereal is available!

How To Make Keto Breakfast Muffins

First, you’ll need to decide what meat you want to use. Crispy bacon is great and ham as mentioned early. Typically, with cheese and egg, sharp cheddar works great but mozzarella and gouda to name a few are great as well. But, for the sake of this recipe let us stick with sausage and sharp cheddar cheese.

Cook sausage in a pan throughly before starting. In a separate bowl, beat eggs then pour in heavy cream. Season this mixture with salt and pepper.

Next, in your muffin tin or cups add the sausage and egg to each one. Then, pour or spoon the egg mix on top leaving a little room for them to rise.

Finally, bake in a preheated oven for 20 minutes. Remove, allow to cool then serve.

  • It’s way easier to load the muffin cups or pan with the cheese and sausage. Then pour the egg over. If you add the ingredients into the egg they will be allow over the place for distribution.
  • Keto breakfast muffins will come out puffed then go flat. That is a character of egg when baking.
  • Add in veggies such as peppers, mushrooms or onions for a added kick.

Ingredients
 

  • 6 large eggs
  • 1/2 cup heavy cream
  • 2 ounces ground sausage
  • 2 ounces shredded sharp cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat oven to 350°F
  • Cook sausage until cooked through
  • In a bowl beat eggs then add heavy cream with salt and pepper
  • In muffin pan or cups added shredded cheese and crumbled sausage
  • Pour egg mix over filling leaving a little room at the top
  • Bake for 20 minutes, remove and allow to cool
