What you get is a moist vanilla cake that’s made in only 90 seconds and loaded with chocolate chips. This way without bananas we can have keto desserts with great texture.

How To Make A Mug Cake With Coconut Flour

Ingredients Needed

  • Coconut Flour
  • Granulated Sweetener
  • Sour Cream
  • Egg
  • Cake Batter Extract
  • Baking Powder
  • Salt
  • Sugar-Free Chocolate Chips

Making The Mug Cake

  1. First, grab yourself a mug or a small bowl. It being a mug cake doesn’t mean you can make it in a coffee mug only.
  2. Next, fill your mug with the dry ingredients. This includes coconut flour, a sweetener, baking powder and salt.
  3. On top, add an egg, sour cream or coconut cream for a dairy free option. Add as well the cake batter extract.
  4. Then, mix well with a spoon. You may need to scrape the extra flour stuck to the spoon. Fold in chocolate chips to finish it off. If you’re able to let it sit for 15 minutes that would be great for better flavor.
  5. Lastly, place in the microwave for 90 seconds. Allow to cool a bit then serving. Place a little ice cream to top for a even better experience.

Helpful Recipe Tips

  • Dairy-free option when you swap out the sour cream for coconut cream.
  • This fits so many diets. You can use coconut sugar for a sweetener if you’re paleo. If keto, I suggest using allulose for the sweetener topped off with liquid monk fruit.

Frequently Asked Questions (FAQs)

Could I use almond flour instead?

No this recipe is specific to coconut flour only. The flours work completely differently. But, if you’re looking for an almond flour mug cake try my snickerdoodle recipe.

Are coconut flour recipes keto friendly?

Most but not all. See, coconut flour is used often in diets such as Paleo. But, they are able to use things such as honey, maple syrup and bananas to sweeten their desserts. Those things are not part of the keto diet food list.

Will this be dry?

No drier than what it should be. I understand this is a fear with coconut flour. In all honestly it should be because coconut flour is so absorbent most recipes come out with a dry hard to swallow texture. With the help of sour cream that should not happen in this recipe.

  1. You can find it in the grocery store along side the vanilla, banana and other extracts. You will recognize the flavor once you get a chance to try it. Think of the flavors in some birthday cake products
