How To Make Sweet Cream Pancakes

Ingredients needed

  • All-purpose flour
  • Granulated sugar
  • Heavy cream
  • Butter
  • Vanilla extract
  • Baking powder + baking soda

Tips, where it can go wrong…

  • Using the heavy cream, the batter will be thick. You won’t need as much because they will fluff up while cooking. This also changes the method to look for the bubbles before flipping the pancakes. There will be a few around the edges as it browns but watch your heat and make adjustments as you cook to make sure the pancakes cook all the way through.
  • The perfect circle shape are hard to achieve with these. I was able to do it with the photos because I used a mold to make a perfect circle.
  • Pancakes are something you have to cook by eye and feel. If you’re new, give yourself time to learn. Some pans will continue getting hotter and hotter with time. A good way to tell is when you put more butter down between pancakes. If the butter quickly starts to brown and burn the pan is too hot and you’ll need to let it cool. To add, after every few pancakes, wipe the excess butter from the pan.

Making the sweet cream pancakes recipe

  1. In a large bowl, whisk together the eggs and the butter. Then, add in the vanilla and heavy cream, whisk until combined.
  2. In a separate bowl, add in the flour, baking soda, baking powder, sugar and salt.
  3. Turn on the pan or skillet to medium-low heat. You don’t want it super hot, the batter is thick and needs time to cook.
  4. Combine the dry and wet ingredients until smooth and free of lumps. Add a little butter to the skillet then add about a ladle full of pancake batter to the skillet. Spread the batter out the best you can then allow the pancake to cook.
  5. After a few minutes flip the pancake. Should be golden, allow the other side to cook. If inexperienced, use a tooth pick to test the pancake doneness once you flip it. If the toothpick comes out clean they are ready.
  6. When the pancake is ready, remove from the heat and place on a plate then repeat the steps until all the batter is gone.

  • 2 tablespoon butter, melted
  • 1 teaspoon vanilla extract
  • 1.5 cup heavy cream
  • 2 cup all-purpose flour (240g)
  • 1/4 cup granulated sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
