How To Make Southwest Chicken Salad
Ingredients you’ll need
- Rotisserie chicken
- Black beans
- Frozen corn
- Roma tomato
- Green bell pepper
- Items for dressing (listed below)
Tips & variations for the salad
- The frozen corn can be switch for canned corn or corn fresh from the cob. Out of the three, I’ve noticed the best flavor with fresh being the best and frozen coming in second.
- There are things you can add that you typically find in southwest recipes that I left out such as: cilantro, onion and avocado. I made the recipe to give the best flavor with as little as possible.
- It’s easy to make your own chicken and shred it but I highly recommend buying a rotisserie chicken and chopping it up. Costco sells the chicken meat from the bone and packaged for a great price.
- In the dressing there is a lemon and a lime used. This produces a very distinct flavor I learned from Chipotle that I used in the corn salsa recipe. However, you can sub one for the other but there will be a change in flavor.
Making the Southwest chicken salad recipe
- First, chop the rotisserie chicken meat up. You’ll want the chicken in small pieces like you see in the recipe photos.
- Now in a bowl, mix together the ingredients for the dressing. Then, chop up and prep the veggies for the recipe as well.
- In a salad bowl, add in the chopped chicken, the veggies then mix in the dressing. Once everything is combined, cover the bowl and allow to sit for at least an hour. Chicken salad is the perfect make ahead recipe because it’s always better the next day after the flavors come together in the dressing.
- After a little time has passed, serve and enjoy. Serve the Southwest chicken salad the same way you would any other chicken salad recipe. As a sandwich, with crackers or eat it as is.

- 1 cup mayo (or 1/2 cup mayo & 1/2 cup sour cream)
- 1/2 lemon, squeezed
- 1/2 lime, squeezed
