- Chicken broth
- Taco seasoning

- Black beans

- Buy a rotisserie chicken then shred it yourself for the chili, this is the easiest option.
- Cook the chicken inside the chili. You can sear the chicken a little then allow it to cook until tender inside the chili. This will keep the chicken moist as well. This method is very similar to cooking in a slow cooker. After the chicken is cooked, shred it up and place it back in the chili.
- Boil the chicken in a separate pot then shred when done. Add it into the chili after.

- To start, sauté the onions until fragrant and translucent. Then, add in the Rotel tomatoes, black beans and corn.

- 1 can Rotel tomatoes & green chilies, drained & rinsed
- 1 pack taco seasoning
- 1 pack ranch seasoning
- 8 ounce velveeta cheese optional
