How To Make Pumpkin Mac And Cheese

Ingredients needed

  • Elbow macaroni pasta
  • Canned pumpkin
  • Mozzarella cheese
  • Evaporated milk
  • Butter
  • All-purpose flour
  • Seasonings (listed below)

Important rule for any mac and cheese recipe

The number one complaint about mac and cheese is it coming out grainy. You need to make the roux on a medium heat and to not use pre-shredded cheese. Too much heat will curdle the cream sauce and the pre-shredded cheese does not melt properly.

Making the pumpkin mac and cheese recipe

  1. First, prep the ingredients and make the cream sauce. Cook the noodles after the cream sauce is done.
  2. In a pan, melt the butter. Then add in the flour and cook for about one minute continuously whisking. Slowly add in the evaporated milk a little at a time. Now, add in the canned pumpkin.
  3. Once the pumpkin is mixed in, gradually add in the grated cheese. Now, after the cheese is melted turn off the heat. Add in the seasoning and salt to taste.
  4. Cook the pasta according to the package instructions. When done, drain the pasta then toss directly in the cream sauce. Do not rinse the pasta or add oil, toss directly in the sauce.
  5. Mix everything and allow the pumpkin mac and cheese to sit for 5 minutes. This will allow the pasta to absorb the sauce before serving.
