  • Cornmeal

  • Greek yogurt or sour cream

  • Spices (listed below)

Helpful tips before starting

  • You can use sour cream or greek yogurt in this recipe. You will not taste either in the end result but they work beautifully in the texture.
  • The recipe calls for 2 medium sized potatoes. There are no exact measurements because they aren’t super important. You have a range and a medium potato will fall under that are just fine for a great sweet potato cornbread in the end.

Making the sweet potato cornbread

  1. First, you’ll need to boil or bake the sweet potatoes to soften them. It doesn’t matter which methods but be sure to leave the skin on for both. Boiling can take up to 40 minutes or until you can easily pierce them with a knife. Bake at 400F for 45-60 depending on the sizes of the sweet potatoes.
  2. Preheat the oven to 400F.
  3. In a bowl combine the dry ingredients together. Mix the cornmeal, flour, sugar, baking powder and the spices together.
  4. Using a hand mixer, blend the softened sweet potatoes with the eggs, milk, oil and yogurt or sour cream.
  5. Now, fold in the dry and wet ingredients until everything is even and smooth. Grease a 9×9 baking dish then bake for 35-40 minutes or until the center is fully cooked, do not allow the edges to fool you.
  6. Once finished allow to cool before serving.

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
