Although you should pay attention to how much you are eating, peanut butter is keto friendly. With chocolate being on board with keto as well it is a match made in heaven. It still shocks me that while on a low carb diet I can still have this dessert combination. At only 4g net carbs for two tablespoons you’re good to eat away!
Best Peanut Butter For Fudge
You want to get natural peanut butter in this recipe. Most brands add oil into the peanut butter. Although this will make the peanut butter smoother and more creamy, it won’t set well. The natural oils are enough.
To add, be sure there is no sugar added to the peanut butter. This will make the recipe keto friendly.
Best Sweetener To Use
For this recipe, I recommend something with erythritol. Why? I am a huge fan of allulose. In fact, it’s all I use other than monk fruit. What happens when erythritol heats up is it melts down then crystalizes. What does this mean?
Your keto peanut butter fudge is now far more stable. It give somewhat of a sugar effect because it brings a hold to the recipe. I haven’t tested allulose for this effect yet but I know erythritol does this very well.
To start, choose the best sweetener and peanut butter for the recipe. I speak so much on it because they are critical.
In a small pot, add a stick of salted butter. I like salted butter in recipes like this but unsalted will work the same. Melt the butter down then add in 1 cup of peanut butter.
Next, toss in vanilla extract and powdered sweetener. Then, continue stirring until everything is smooth again.
Now, be sure to line loaf pan with parchment paper and pour in fudge batter.
Place in refrigerator for a few hours. Mine set after about 3 hours. Remove, cut up then serve.

Powdered sweetener, not using powdered sweetener with result in a crunchy fudge. Using erythritol which I do recommend may result in this anyway even if the sweetener is powdered. I experienced this from my no bake cookies. I made a batch with allulose and Lakanto. The Lakanto which has erythritol was crunchy. Yet, the batch with allulose was smooth.

Next, in a pot on medium heat add butter. Allow to melt.
Then add in peanut butter. Continue to mix until smooth
Add in powdered sweetener and vanilla extract. Continue mixing until smooth.
Now, pour into loaf pan and place in refriderator until set and hardened. It took mine about 2.5-3 hours to fully set.
