Keto Peanut Butter Fudge

Ingredients

  • 8 tablespoon salted butter
  • 1 cup natural sugar free peanut butter
  • 1/2 cup powdered sweetener
  • 1 teaspoon vanilla extract

Instructions

  • Line a loaf pan with parchement paper
  • Next, in a pot on medium heat add butter. Allow to melt.
  • Then add in peanut butter. Continue to mix until smooth
  • Add in powdered sweetener and vanilla extract. Continue mixing until smooth.
  • Now, pour into loaf pan and place in refriderator until set and hardened. It took mine about 2.5-3 hours to fully set.

Notes

Helpful Recipe Tips

  • Line loaf pan with parchment paper, this is not a recipe that is an easy release. You'll have to line the pan to be able to remove it.
  • Natural peanut butter, the less oily the peanut butter the better the recipe will set.
  • Powdered sweetener, not using powdered sweetener with result in a crunchy fudge. Using erythritol which I do recommend may result in this anyway even if the sweetener is powdered. I experienced this from my no bake cookies. I made a batch with allulose and Lakanto. The Lakanto which has erythritol was crunchy. Yet, the batch with allulose was smooth.
