  • Baby Yukon potatoes
  • Italian dressing

Quick tip for the best chicken before starting

Marinate the chicken in the Italian dressing, this can be done overnight. Right before firing up the slow cooker, sear the chicken on the stove top. Do not try to cook it through, you only want the outside golden bits. Give it some caramelization then chop the chicken into chunks once it’s cool enough to handle.

You can skip this step but from the many crockpot recipes I have, searing the meat before always results in a better dish.

Making the chicken, potatoes and green beans in the crockpot

  1. The night before, add 1/2 cup of Italian dressing to the chicken breast. Allow them to marinate throughout the night.
  2. When ready to cook, halve the baby potatoes. Toss the potatoes and green beans in Italian dressing then add them to the crockpot. Try to section the crockpot so that each ingredient has its own space.
  3. Sear the chicken or simply chop it into chunks then add it into the crockpot as well.
  4. Turn the crockpot on high for 4 hours or low for 6 hours. You do not need to add liquid because the juices will release from the veggies and the chicken as it starts to cook.
  5. After the time is up, serve and enjoy. You may need to add salt and pepper to taste but from my experience the dressing does a good job at seasoning everything.

Can I add raw chicken into the crockpot or slow cooker?

Yes you can. The issue or worries with contamination is when the food is not cooked. For example, chopping raw chicken on the same cutting board that you plan to cut fresh tomatoes that will be served in a salad.
