- Cottage cheese
- Evaporated milk
- Mozzarella cheese
- All-purpose flour
- Butter

- If you only have one pot to prepare everything always prepare the cheese sauce first. There is a crucial time to get the noodles into the cheese sauce to keep them from getting dry and sticking together. I’ve seen techniques to add oil to them but that not something I recommend.
- Use low moisture mozzarella for the recipe and grate the cheese yourself.
Making the cottage cheese mac and cheese
- First, prep the ingredients before starting.
- In a pot on medium heat, melt the butter then add in the flour. Whisk the flour with the melted butter about 2 minutes.
- Then, slowly pour in the evaporated milk little by little. It’ll get clumpy at first but don’t worry. After the milk is mixed in with the flour, add in the cottage cheese.
- Next, gradually add in the mozzarella cheese. When all the cheese is added and almost melted completely, remove the pot from the stove.
- Now, prepare the macaroni according to the package instructions. When done, drain the water but do not rinse the macaroni and place the noodles directly into the cheese sauce. Stir everything well and season with salt and pepper to taste.
- Allow the macaroni to sit in the cheese sauce for at least 5 minutes before serving, enjoy.
