Cottage cheese mac and cheese is a twist to the classic recipe with the creaminess from cottage cheese. An easy weeknight side dish made right on the stove top.
In a pot on medium heat, melt the butter then add in the flour. Whisk the flour with the melted butter about 2 minutes.
Then, slowly pour in the evaporated milk little by little. It'll get clumpy at first but don't worry. After the milk is mixed in with the flour, add in the cottage cheese.
Next, gradually add in the mozzarella cheese. When all the cheese is added and almost melted completely, remove the pot from the stove.
Now, prepare the macaroni according to the package instructions. When done, drain the water but do not rinse the macaroni and place the noodles directly into the cheese sauce. Stir everything well and season with salt and pepper to taste.
Allow the macaroni to sit in the cheese sauce for at least 5 minutes before serving, enjoy.
