Ingredients needed
- Cooked chicken
- Bell peppers
- Blue cheese
- Buffalo sauce
- Ranch seasoning
- Greek yogurt
- Shredded cheese (any cheese works but I recommend mozzarella or cheddar)
Quick tips before starting the recipe
- What the best peppers to use? Orange, red and yellow are the sweetest but the green gives a nice earthy flavor that works well.
- You can sub the greek yogurt for sour cream 1:1.
- You can skip the blue cheese as well because it does have a strong flavor. If you remove the blue cheese you do not have to replace it but if you want to, I highly recommend mozzarella or provolone in place of it.
Making the buffalo chicken stuffed peppers recipe
- Preheat the oven to 375F.
- First, chop up the chicken so that there are no huge chunks. Then in a bowl mix together the chicken, yogurt, ranch seasoning, buffalo sauce and crumbled blue cheese.
- Slice the bell peppers in half and remove the seeds and stems on the inside of the peppers. Stuff the peppers with the chicken filling then top with shredded cheese. Place the peppers in a baking dish or sheet pan and bake for 30 minutes.
- Once the cheese is melted and the peppers have withered they are ready. If you want to brown the cheese more, turn the broil on for a few minutes until browning starts.
- Remove from the oven and allow to cool for a few minutes because the filling will be extremely hot.
