Buffalo chicken stuffed peppers are super easy to make any day of the week. Juicy chicken in buffalo sauce with cheesy fillings then stuffed in sweet peppers and topped with more cheese.
First, chop up the chicken so that there are no huge chunks. Then in a bowl mix together the chicken, yogurt, ranch seasoning, buffalo sauce and crumbled blue cheese.
Slice the bell peppers in half and remove the seeds and stems on the inside of the peppers. Stuff the peppers with the chicken filling then top with shredded cheese. Place the peppers in a baking dish or sheet pan and bake for 30 minutes.
Once the cheese is melted and the peppers have withered they are ready. If you want to brown the cheese more, turn the broil on for a few minutes until browning starts.
Remove from the oven and allow to cool for a few minutes because the filling will be extremely hot.
