Preheat the oven to 350℉.
Next, mash the bananas in a bowl. Then, whisk in the egg, honey and vanilla. Lastly, fold in the salt, chocolate chips and the quick oats.
As mentioned in my tips, the batter should be somewhat thick, but not so thick you can barely get a spoon through it. Or so thick you can roll a stiff ball like normal cookie dough.
Take a cookie scoop of the dough and place it on a lined sheet pan. Form the cookie with your hands and flatten it as well. Make all the cookies on the sheet pan then place in the oven for 12 minutes. They'll brown on the bottom, you won't be able to tell on the top as much.
After removing them from the oven, allow them to sit and cool completely before serving. If you pick them up too fast they are likely to fall apart.
