How To Make Taco Potato Casserole

Ingredients needed

  • Ground beef
  • Taco seasoning
  • Onion
  • Green bell pepper
  • Diced tomatoes
  • Tomato sauce
  • Cubed hash brown potatoes
  • Shredded cheese

Helpful tips & variations for the recipe

  • Be sure to thaw the frozen cubed hash browns for proper cooking. You can sub the frozen hash browns for peeled & diced yellow potatoes but you will need to adjust the cooking time to allow them to cook thoroughly. The frozen hash browns gives you the potatoes and they are super easy.
  • The taco potato casserole is perfect on it’s own but adding toppings makes it even better.

Making the taco potato casserole

  1. First, allow the hash browns to thaw completely. A great way to do this is stick them in the fridge the day of or the night before you are going to make the recipe.
  2. Then, dice the onion and bell pepper. Preheat the oven to 350F.
  3. Now, in a pan on medium high heat add a little oil and brown the ground beef. When the ground beef is almost browned add in the onions and green pepper. Cook everything until the beef is cooked and the veggies are fragrant.
  4. Next, add in diced tomatoes and tomato sauce. Then, pour in the taco seasoning packets. Mix everything together then remove from the heat.
  5. In the casserole dish, mix the taco mix you just prepared with the thawed potatoes and spread it out in a 16×9 baking dish. Top off with shredded cheese.
  6. Place the baking dish in preheated oven for 45 minutes. Remove and allow to cool before serving, the inside will be very hot.

Frequently Asked Questions (FAQs)

Can I make this recipe in the crockpot or slow cooker?

Yes, this casserole can work the exact same in the crockpot. The only adjustment I would make is to not add the shredded cheese until you were preparing to serve.

Can I use frozen shredded hash browns instead?

Yes, that works fine as well. I still suggest allowing the potatoes to thaw before cooking the recipe.
