Sugar free popsicles are a great summer time low carb dessert to go to. These are strawberry flavored with a low carb count, making them keto friendly as well. A hint of cream and strawberry in a frozen treat is just what the doctor ordered.
I use to eat those fruit popsicles out of the freezer aisle all the time. Thinking they were completely healthy for me. I mean it’s fruit right? And fruit isn’t bad?
By no means am I saying fruits bad. As far as sugar content goes, fruit have a nice range of high to low. Strawberry’s are a favorite and luckily are relatively low in carbs. Which made the flavor perfect for my sugar free popsicles.
Fudge is great, chocolate is never a bad option. But, fruit flavored is always the way to go with popsicles in my opinion. The light, fresh taste of strawberry’s. Along with the sweet scent of the berries coming from a frozen treat in front of you. What more could you ask for?

Strawberry Sugar Free Popsicles
So, the secret that made these spectacular was the whipped cream. Not the heavy cream, but the cool whip type cream. What it did was produce a strawberries dipped in cream within a frozen treat. It’s not just a plain strawberry flavor. Not that, that would be bad. It just wouldn’t be as amazing as these.
Personally, I’m not bias against using cool whip. It isn’t the best, but for convenience, I get it!
The copycat I created I just freeze for occasions such as these. Sweetener wise you wanna go a little overboard. Not much! Just a little sweeter than you like. Simply because things that are cold the sweetness is dumbed down naturally.

Popsicle molds and me have some serious issues. I have tried two. Anyone have a failsafe mold or tip? Let a brother know in the comments!

Strawberry Sugar Free Popsicles
Ingredients
- 1 cup Heavy cream
- 1/4 cup whip cream or sour cream
- 1/2 teaspoon Liquid stevia (I used this)
- 1 cup sliced strawberries
- 1/4 cup Unsweetened Almond Milk
- 1/4 cup granulated sweetener (I used this)
- 1/8 teaspoon guar gum or xanthan gum (I used this)
Instructions
- In a blender, nutribullet, or food processor add heavy cream, whip cream or sour cream, liquid stevia, and sliced strawberries
- After that's done blending add unsweetened almond milk
- Mix your guar gum or xanthan gum in with granulated sweetener
- Then quickly add and blend to avoid clumps
- Pour into popsicle molds and freeze for a few hours
