Ingredients
 

  • 1 pound lean ground beef
  • 1 pound Yukon gold potatoes (diced)
  • 15 ounce black beans (drained & rinsed)
  • 1 ranch seasoning packet
  • 1 taco seasoning packet
  • 2 cup cheddar cheese (shredded)
  • 4 ounce chunky salsa

Instructions
 

  • Preheat the oven to 400℉
  • To start, brown the ground beef in the pan on the stove top. Remove the ground beef from the pan when finished browning then add a little oil. Toss in the potatoes and spread them out in the pan then cover for about 5 minutes on a medium heat.
  • Go back and check on the potatoes to turn them. Cover for another 5 minutes. After the time is up, add in the salsa, black beans, browned ground beef and half the cheese. Mix everything together then top with the remaining cheese.
  • Place the pan in the oven and bake for 10-15 minutes to allow the cheese to melt.
  • Allow to cool then serve and enjoy!
