Well, I have the perfect dressing for you.

This lemon vinaigrette dressing is what you’ll need. You get the acidic flavors of lemon but is calmed down with the olive oil then the touch of sweetness from the honey and dijon mustard.

The flavor come together so well with fresh greens. You have to try it!

How To Make Lemon Vinaigrette Dressing

Ingredients needed

  • Fresh lemons
  • Olive oil
  • Dijon mustard
  • Honey
  • Salt & black pepper

Making the lemon vinaigrette dressing

  1. First, slice and squeeze the lemons into a bowl or jar. It doesn’t have to be perfect but you want around 1/4 cup of lemon juice.
  2. Add in the honey, dijon mustard, oil and give everything a good mix.
  3. Lastly, add salt and black pepper to taste. I provided starting measurements but adjust as you go.

What is lemon vinaigrette made of?

All vinaigrette dressing at their core* are something acidic and an oil like olive oil. They are not complicated but you do want to have the right ratios.

Why is my lemon vinaigrette bitter?

As mentioned above the ratios are off. You don’t need much lemon compared to oil and you want to have something with a little sweetness to counter the acidity. Some people like to add raw garlic but I’m not a fan.

Do I need to refrigerate the dressing?

Yes, if you have any leftovers I would recommend placing in the fridge. To add, most salad dressing taste better the next day. Ranch, lime, blue cheese you name it.

How can I thicken the dressing?

The dressing isn’t made to be thick like ranch dressing. But, an easy way to do this is blend in a very small amount of xanthan gum. This is what the salad dressing in the store use. A little goes a very long way so add pinches at a time while blending. It’ll also bring the ingredients together better as well.
