First, slice and squeeze the lemons into a bowl or jar. It doesn't have to be perfect but you want around 1/4 cup of lemon juice.
Add in the honey, dijon mustard, oil and give everything a good mix.
Lastly, add salt and black pepper to taste. I provided starting measurements but adjust as you go.
Will yield around 3/4-1 cup of dressing.
