Helpful tips before starting
- This salad can be made in under 30 minutes. It’s the perfect salad to make ahead.
- In the photos you see medley tomatoes used but I mention cherry tomatoes. Any tomatoes will work in this recipe. Cherry tomatoes have a great sweetness to them but medley tomatoes with all the colors are fun to eat and they all bring their own little flavor.
Making the Mediterranean quinoa salad
- First, make the quinoa according to the instructions on the package.
- While the quinoa is cooking prep the tomatoes, olives and crumble the cheese if the feta is still in the block form.
- Now, chop the basil and remove the thyme from the stems. In a small bowl whisk together the olive oil, red wine vinegar, apple cider vinegar, chopped herbs, salt and pepper.
- When the quinoa has had a chance to cool, toss in all the ingredients including the dressing. Give everything an even mix.
- Lastly, salt and pepper to taste. Serve warm or cold.
Should you store the leftovers?
Yes, this Mediterranean quinoa salad keeps very well in the refrigerator. At least 3-4 days. I wouldn’t suggest freezing this salad because vegetables get really mushy when thawed from frozen.
Frequently Asked Questions (FAQs)
What’s the best quinoa to use?
In this recipe I use white quinoa. There are several different kinds but this is the most neutral tasting one in my opinion. White quinoa will not overpower the ingredients or dressing.
Do I wash quinoa before cooking?
I recommend washing the quinoa before cooking. Even if the package says the quinoa has been washed already.
Is quinoa a Mediterranean food?
Quinoa isn’t Mediterranean technically, meaning it isn’t sourced there. However, the Mediterranean diet is very plant based and uses whole grains that aren’t processed very much and quinoa is a great option. Not to mention it’s high protein count.
