Mediterranean Quinoa Salad

Jump to Recipe

Mediterranean quinoa salad is a light, healthy option that’s filling and packed with plant based protein from whole grain quinoa.

Ingredients needed

  • Quinoa
  • Feta cheese
  • Cherry tomatoes
  • Kalamata olives
  • Red onion
  • Olive oil
  • Red wine vinegar
  • Basil
  • Thyme
  • Apple cider vinegar
  • Salt & black pepper

Helpful tips before starting

  • This salad can be made in under 30 minutes. It’s the perfect salad to make ahead.
  • In the photos you see medley tomatoes used but I mention cherry tomatoes. Any tomatoes will work in this recipe. Cherry tomatoes have a great sweetness to them but medley tomatoes with all the colors are fun to eat and they all bring their own little flavor.

Storing the leftovers

Mediterranean quinoa salad keeps very well in the refrigerator. At least 3-4 days. I wouldn’t suggest freezing this salad because vegetables get really mushy when thawed from frozen.
