Keto sugar cookies are a twist to a holiday favorite at 1g net carbs per cookie. These almond flour cookies have a buttery, crunchy texture with sugar free sprinkles. They’re easy to make and done in 20 minutes or less from the oven!
Keto cookies never get old. I have made several over the 5 years I have been doing this at the time of writing. My favorites are easily my red velvet and my no bake version, I’ll list many others below. Keto sugar cookies come in many varieties from classic shortbread to the cut out cookies like my crispy gingerbread cookies. I have also seen people use icing but I don’t think that’s a good choice if you’re using any sweetener with a aftertaste.
What Are Keto Cookies
Cookies on keto are much different than what you’re use to. At first there were only soft baked but we do have crispy versions such as HighKey which are delicious. Almost all cookies bought in store will be almond flour cookies. That’s because almond flour produces a great texture and can become crispy. At home, you’ll find recipes with coconut flour and almond flour. Coconut flour cookies aren’t popular due to the texture.
I have heard people say that the first keto cookie was odd in texture because it seem like cookie dough rather than a cookie. These keto sugar cookies bake soft but when they are fully cooled they become crispy. After storing them just pop them in the microwave to get that more soft baked feel with them.
How To Make Keto Sugar Cookies
To start, I have a little trick I just learned with my cookie, muffin and cake recipes. The issue I noticed was sometimes I’d use extracts or flavoring that seemed to get lost in the dessert. Until I found a trick of adding the extract to the dry ingredients before anything else.
Next, mix all wet ingredients together. Then, add them into the dry mix.
Now, you’ll need a cookie scoop. With that, you will be able to get about 15 or more cookies. Each cookie will only be 1g net carbs each. Â Before scooping add in keto sprinkles. I haven’t seen them in store yet but Amazon has a few versions in the link provided.
Next, scoop cookies onto a line cookie sheet. I prefer parchment paper because I just don’t trust keto cookies on my non-stick pans, you can never tell. Bake for 15-20 minutes then remove and allow the cookies to cool. Almond flour is very fragile while still hot.
Helpful Recipe Tips
- Flavoring, I suggest using cake batter or butter flavor for making these cookies. They amp up the flavor because almond flour is very bland on its own. This will give you the best cookie possible.
- Sprinkles, I am not against using regular sprinkles but there are keto sprinkles to buy. I was lucky enough to have a test product sent to me via a wholesale company when I created my birthday cake bites with ChipMonk baking.
- Work flavors together either by mixing the flavor in the dry ingredients or making the dough and allowing it to sit for an hour or more.
