Lemon isn’t seasonal let’s be honest. You and I want it all year long. My super popular recipe for coconut flour lemon cupcakes had made a staple on the internet. But, I didn’t have an almond flour lemon cupcake, now I do! I have learned how to really make the cupcakes bursting with lemon flavor. Now, I bring a sweet, sugar free buttercream frosting to top all 7 of the cupcakes this recipe makes. You won’t have to have a cheat day because these will shut that sweet craving up in the first bite!

Yes, and this is a valid question to anyone starting the keto diet. Most fruits are high in sugar but lemon isn’t one. At 100g, you’ll only lose 6g net carbs out of the entire day. Yet, the wonderful thing about this recipe is you won’t be ingesting the actual fruit. But, if you ever decide to this information will serve you well.

How To Make Keto Lemon Cupcakes

To start, when creating a cupcake you want a super moist texture. The key to these are the mix of almond and coconut flour which gives you that. Ingredients are below:

First, mix your almond flour, coconut flour, sweetener, salt and baking powder together. These are all of your dry ingredients.

Next, melt butter then beat in 2 large eggs along with lemon flavor and liquid monk fruit. Combine the dry and wet ingredients.

In muffin cups, dollop batter into each cup. Then, bake 25 minutes in a preheated oven. Remove, then allow to cool completely before adding the buttercream frosting.

  • The best lemon flavor, you cannot achieve this from lemon extract on keto. The best flavor will come from a lemon emulsion, lemon flavoring and lemon zest. Lemon extract simply is a waste of money and gets lost in flavor. Then when you add more you just taste the chemicals in the dessert, primary the alcohol used to carry the flavor.   • Room temp butter to aid you in making the buttercream. For a cream cheese frosting or whipped cream frosting use the links provided.

How To Store Buttercream Frosting

After you have made the frosting, it will be really smooth and delicious. But, it is butter so if you leave it out it could possibly melt to nothing. Refrigerate the frosting. But, when you are ready to eat more you’ll need to pull it out ahead of time to soften. Due to the sweetener, you may want to use a whisk or the hand mixer to get that smooth consistency again.

Dry Ingredients

  • 1 cup blanched almond flour
  • 2 tablespoon coconut flour
  • 1/4 cup granulated sweetener
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt

Wet Ingredients

Buttercream Frosting

Lemon Cupcakes

  • Preheat oven to 350°F, melt butter
  • In a mixing bowl add all dry ingredients
  • In a seperate bowl grab meltbutter then add in the rest of the wet ingredients
  • Combine dry and wet ingredients
  • Spoon into muffins cups leaving room at the top for rising
  • Place in preheated oven for 20-25 minutes. Ovens may vary
  • Allow to cool completley before frosting

Buttercream frosting

  • Bring butter to room temp where it is soft enough to mix with a hand mixer.
  • Add all ingredients to the butter and mix until smooth and free of lumps.

  1. You can leave out the liquid sweetener and use the Splenda in the place of the granulated sweetener. Or, did you mean liquid sweetener? If thats the case then yes.
