How To Make Keto Cinnamon Rolls-Step By Step

  1. Preheat oven and melt butter to allow cooling.
  2. Next, Mix dry and wet ingredients separate. Then, combine them both. Don’t use a mixer, dough will be too thick for a mixer. Fold dough with spatula until well mixed.
  3. Rolling the dough is really easy. Unlike some that are super sticky and cause you to make a mess this dough won’t do that. It’s easily moldable and sticks to itself greatly. Go for a rectangular shape. To refine the square simply tear pieces and press it down then roll it into place.

  4. With softened butter spread on top of dough then sprinkle cinnamon and sugar mix over dough. Next, pat it down into the butter so it doesn’t roll off while you are rolling.
  5. Roll the dough over itself using the parchment paper as a guide. Cut into pieces, I was able to get nine cinnamon rolls out of mine.
  6. On a baking sheet, bake for 20-25 minutes or until brown. Pull out of oven then allow to cool.
  7. Lastly, make cream cheese frosting and top when keto cinnamon rolls have cooled down.

Helpful Recipe Tips

  • When rolling the dough be extra careful not to roll super thin. I showed in the video and photo above that the rolled dough shouldn’t be any thinner than that. This will create a very hard time from it releasing from parchment paper.
  • Make sure to oil both sides of the parchment paper. You don’t need any oil or water on your hands but oil your paper.
  • For filling, putting butter in the microwave for 5-10 seconds removing before melting. Or leaving butter out for an hour before starting the recipe.

This Is Not Fathead Dough

I have tried several recipes with fathead dough. I worked hard on figuring out a recipe that wouldn’t require cheese in my cinnamon rolls.

Ingredients
 

Dough

  • 1.25 cup blanched almond flour
  • 1.5 tablespoon coconut flour
  • 1/4 cup sweetener
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 4 tablespoon melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoon liquid monk fruit

Filling

  • 2 tablespoon softened butter
  • 1.5 tablespoon sweetener
  • 1 teaspoon ground cinnamon

Cream cheese frosting

  • 1/4 cup full fat cream cheese
  • 1 tablespoon sour cream
  • 2 tablespoon powdered sweetener (Allulose recommended)
  • 1/4 teaspoon vanilla extract

Instructions
 

Cinnamon Rolls

  • Preheat oven to 350°F and melt butter down that you are using for dough (4 TB)
  • Mix dry ingredients almond flour, coconut flour, sweetener, xanthan gum, salt, ground cinnamon, baking powder
  • Mix wet ingredients melted butter, egg, vanilla extract and monk fruit extract
  • Combine dry and wet by folding with a spatula such as video. Dough will get really thick. Too thick for a hand mixer.
  • Oil 2 sheets of parchment paper and lay dough down on top of the oiled side.
  • Lay other half with oil side down on top of dough the being rolling into a rectangle shape. A tip I would cut off pieces to form a rectangle shape then just rolled them back down into the dough.
  • Don't roll dough too thin. If dough is sticking to the paper you have rolled too thin
  • Spread softened butter leaving about an half an inch at the end. Then sprinke cinnamon and sugar across after you have mixed those 2 together.
  • Being your roll, slowly
  • Cut into pieces and make sure the end piece isn't hanging. A little pressure will cause the dough to stick to itself easily. Spread out on the baking sheet.
  • Bake for 20-25 minutes in preheated oven. The tops will brown slightly but be mindful of the bottoms.

Cream Cheese Frosting

  • Make sure cream cheese is room temp
  • Mix cream cheese and sour cream first
  • Then add the rest of the ingredients and mix until smooth
