How To Make A Keto Chocolate Mousse-Step By Step
- First, melt coconut cream on a low heat. You want just enough heat to melt coconut cream and chocolate you don’t want things to seize on you. But, melt coconut cream first then add in chopped chocolate.
- Next, add in sweetener. It can be powdered or granulated. Mix well but make sure your chocolate isn’t getting too hot.
- After that’s mixed well, pull off heat and set to the side to cool. Give it 5 to 10 minutes but if it cools too much and gets thick, give it a little heat to thin out.
- Now, pour heavy cream and whip until you form stiff peaks. Pour cooled chocolate on top and stir. Please! Make sure chocolate is not super hot or you’ll destroy the entire dish.
- Place in refrigerator about 15-30 minutes to allow mousse to set. You’ll know it’s set when you shake it and it doesn’t wiggle.
Helpful Recipe Tips
- Choose any chocolate you like. I used Lindt 90% but I normally go for 95% and sometimes 99% when I find it. Baker’s chocolate will be more bitter of course.
- For a more dense mousse reduce heavy cream by a fourth of a cup
- If you can’t find coconut cream simply grab a can of coconut milk. Refrigerate it for an hour or so then you open the can all the cream will be at the top. Be careful not to shake because the coconut water is at the bottom.
Macros
I used ramekins for my recipe and I was able to get 4 small ramekins full. A full nutrition label below via Cronometer reflects that with each serving coming out to only 2g net carbs each!
