Having keto cheeseburger soup during colder months is a great choice when living a healthy lifestyle. You get all the great flavors of a classic cheeseburger with bacon, onion, garlic with garnishing of cheese and pickles. A low carb soup recipe can still be comforting, simple to make and delicious.
Keto cheeseburger soup turned out to be one of my favorite low carb soup recipes. Recently, I made a cheeseburger casserole but this one was faster to make and I dare say I enjoyed it more. The soup is thickened with a mix of cream cheese and heavy cream for a warm hamburger soup with a cheesy base. Then, garnished with pickles and crunchy bacon.
What Is Cheeseburger Soup
It is exactly what it sounds like, cheeseburger made into a soup. Traditionally, the soup has potatoes in it and you can simply replace the potatoes with cauliflower. In this recipe, I didn’t add cauliflower but in the notes I will show you how to add them.
How Can I Thicken Keto Cheeseburger Soup?
So, normally the soup is thickened from the starch leftover by the potatoes. We don’t have that luxury here but we do have cream cheese. It works perfectly and brings a wonderful flavor to the overall soup.
How To Make Keto Cheeseburger Soup
To start, dice your onion and cut bacon up. In a large pot fry bacon then remove. Leave a little of the bacon grease in the pan. Then, add the onion and ground beef.
Cook ground beef until brown. Now, add in the cream cheese, ketchup, mustard and combine then well. You’ll now have a creamy mix of hamburger in the pan.
Then, on top of that pour in beef broth. For a thicker soup, use half the beef broth. At this point bring to a boil then simmer. If using cauliflower add it in now. Cook until tender.
Lastly, add in heavy cream and turn the heat off. When serving garnish with shredded cheese, leftover bacon and pickles.
Can I Freeze Homemade Soup
Yes you can! Simply add the soup to a sealed container and freeze for a few months. This recipe keeps in the refrigerator for about a week as well. It works well for meal prep as well to have for a simple lunch during the week.

- How to add cauliflower, I didn’t include cauliflower because I didn’t think it was needed. Yet, I understand why someone would. It’s easy, at the stage after the you add the broth and bring it to a simmer add in the cauliflower florets. Cook until tender then continue the rest of the steps in the recipe.
- What is the best ground beef, the leaner the ground beef the less fat leftover. I think in this recipe 85/15 is fine but going lower than that you’re making the soup more greasy. From a cheeseburger stand this can be delicious but from a soup point it can be a bit overkill.
- Make it your own, if there is anything you love on your burgers from mushrooms to tomatoes toss it in! Now, lettuce is a thing but I would say garnish with it after the soup is done if that’s what you like.

Keto Cheeseburger Soup
Ingredients
- 1 pound 85/15 ground beef
- 1/2 diced yellow onion
- 4 strip bacon
- 2 ounce full fat cream cheese
- 2 tablespoon sugar free ketchup
- 1 teaspoon mustard
- 1 cup beef broth (1/2 cup for thicker soup)
- 1/2 cup heavy cream
- 1/4 cup shredded sharp cheese
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions
- Dice onion and chop up bacon.
- In a large pot on medium/high heat cook up chopped bacon. Remove any excess fat leaving about 1 TB. Add in onion and ground beef. Cook until brown.
- Once brown lower heat to medium add in cream cheese stirring often to prevent burning or sticking. If too hot lower heat. Once cream cheese is melted add in 1/4 cup shredded cheeddar. Stir in until melted.
- Next add in ketchup, mustard and garlic powder. Once combined pour beef broth in. Bring to simmer. If using cauliflower add at his point. See notes, if not adding cauliflower go to next step.
- Add in heavy cream. Now taste for salt. If you need more salt add in the 1 tsp above or make adjustments needed. Depending on ingredients used this can vary widely how much salt you'll need to add.
- Remove from heat then serve with garnishing of extra cheese, bacon and pickles.
