When I first heard of this recipe I could only think to myself this was another hype recipe. To my surprise I get it! Much like the keto chaffle it truly works and is useful. It takes no time in the microwave and the keto bread gets crispy on the stove top. Now, that is only the almond flour version that gets crispy. Both versions have a neutral taste because I use egg white powder instead of an entire egg. That creates a keto mug bread without that eggy flavor because there is no yolk involved.

Basically, you whip up bread in a mug just like when we make a mug cake. The bread comes out fluffy and dry enough to cut with a bread knife then toast in a pan. Don’t add it to a toaster but you can sear it in a pan of butter. A lot of people as is there any bread you can eat on the keto diet and the answer is yes!
Is Keto Bread Really Keto
Very good question, yes and no, allow me to explain. From an ingredient point they are keto friendly but keto goes much deeper than just ingredients. Start out with a mug. I suggest a mug with the most cylinder shape you can find. This aids in the cutting of the bread when it’s done. In keto mug cakes I sometimes just make it in a bowl but for this recipe a bowl won’t be the wisest, especially if making for small sandwiches.
First, melt butter in the microwave. Then, add in almond flour, egg white powder, baking powder and butter. Yes, egg white powder is my secret ingredient to make the recipe to have no eggy taste in the bread. It also helps in making the bread dry enough to become crispy when toasted. Yet, the butter keeps it fluffy.
Microwave for 60 seconds then remove and serve. In an 1100 watt microwave this recipe is done in 60 seconds not 90. When it’s done the top should be dry, spongy and the sides will be releasing from the mug itself, most times. Sometimes you’ll need to run a knife around the sides to release it.
Take the bread from the mug and slice it with a bread knife. Add a little butter to a pan on medium heat and toast the bread. It won’t take long so watch it closely.
How To Store
If you make ahead to save for later simply slice it and stick it in a container. Due to the ingredients this keto bread will last well over a week in the refrigerator. When ready to eat simply pull it out and toast it up on the stove then serve. You can freeze it as well although I can’t see a reason you’d have to.

- Crispy edges, only the almond flour version gets crispy when toasted. You can toast both but only one gets that crunchy texture.
- Add extra water when needed, the batter should be smooth. If still thick after 2 TB of water add a little at a time until the batter is smooth like in the video.

- 1 tablespoon egg white powder
- 1/2 teaspoon baking powder
- 1 tablespoon butter
- 2 tablespoon water
Coconut Flour Version
- 1 tablespoon coconut flour
- 1 tablespoon egg white powder
- 1 teaspoon baking powder
- 1 tablespoon butter
- 3 tablespoon water
Instructions
- Both recipes are to be made the same way. The nutrition info below is for almond flour only.
- Melt butter in microwave. Then add all ingredients into the most cyclinder mug you can find.
- If using an 1100 watt microwave you'll only need 60 seconds for it to be done. When done the top will be dry and the feel will be spongy. The sides of the bread will release from the sides of the mug most times. If it's still touching just run a knife to release it.
- Slice the bread with a bread knife and toast in a pan with butter. Watch closely because it browns quickly.
