How To Make Cauliflower Casserole Keto Friendly
- First, add an egg into the Kettle & Fire cheddar bone broth. This is your base that you just buy out the store and pour. I add salt into it to help for flavor. I have a cheddar sauce you can make at home , but this is easier.
- If your bacon isn’t pre-cooked do that now. Also, slice up green onion and chop cauliflower. Doesn’t have to be perfect just chop it in small and large chunks.
- Next, Mix cauliflower with cheddar sauce. Toss in green onion and bacon.
- Spread it out evenly in a baking dish. I used a 9×9 baking dish.
- Then, Top with any cheese you’d like. Sharp cheddar is great but I used gruyere for a more nuttier flavor.
- Lastly, Bake for 30-40 minutes making sure your cheese has browned. Allow to cool a bit and then serve.

- Store bought cheese sauce makes this super easy but you can make your own with this recipe.
- Mixing cheeses or changing it up from the standard sharp cheddar is best. I used gruyere because I like the flavor and it’s different. Not to mention I sprinkled a little goat cheese as well for added flavor.
- Add chicken for more protein or even to make this a stand alone dish that doesn’t need a side dish.
- If you’d like to skip chopping of the cauliflower try frozen cauliflower rice.

So, I separate the casserole into about 8 portions from a 9×9 baking pan with a rough estimate of 5g net carbs per serving. So, if you get 8 plates these numbers are as accurate as you can get.

Ingredients
- 1 box Kettle & Fire broccoli cheddar bone broth soup
- 1 large egg
- 1 teaspoon salt
- 1 small cauliflower head
- 71 g green onion (1 cup chopped)
- 5 slices bacon
- 110 g shredded cheese
Instructions
- Cook bacon if you aren't using bacon crumbles. Slice up green onion, shred cheese, and chop cauliflower head
- Preheat oven to 400°F
- Beat egg into cheddar soup. If you make my cheddar sauce still use the egg and add salt as well.
- Combine chopped cauliflower and cheddar soup base. Then toss in the rest of the ingredients leaving out the shredded cheese.
- Spread in baking dish and pat it down evenly. Spread shredded cheese across the top then place in oven for 30-40 minutes or until cheese is browned.
- Allow to cool then serve
