  • 9x9 baking dish

Ingredients

  • 1 box Kettle & Fire broccoli cheddar bone broth soup
  • 1 large egg
  • 1 teaspoon salt
  • 1 small cauliflower head
  • 71 g green onion 1 cup chopped
  • 5 slices bacon
  • 110 g shredded cheese

Instructions

  • Cook bacon if you aren't using bacon crumbles. Slice up green onion, shred cheese, and chop cauliflower head
  • Preheat oven to 400°F
  • Beat egg into cheddar soup. If you make my cheddar sauce still use the egg and add salt as well.
  • Combine chopped cauliflower and cheddar soup base. Then toss in the rest of the ingredients leaving out the shredded cheese.
  • Spread in baking dish and pat it down evenly. Spread shredded cheese across the top then place in oven for 30-40 minutes or until cheese is browned.
  • Allow to cool then serve

Notes

Helpful Recipe Tips

  • Store bought cheese sauce makes this super easy but you can make your own with this recipe.
  • Mixing cheeses or changing it up from the standard sharp cheddar is best. I used gruyere because I like the flavor and it's different. Not to mention I sprinkled a little goat cheese as well for added flavor.
  • Add chicken for more protein or even to make this a stand alone dish that doesn't need a side dish.
  • If you'd like to skip chopping of the cauliflower try frozen cauliflower rice.
