Keto cauliflower casserole recipe that's loaded with cheese and cheddar. Easy to make with a store bought base featuring green onion and bacon crumbles. This casserole is a great side or main dish when trying to eat healthy with the family.
1boxKettle & Fire broccoli cheddar bone broth soup
1largeegg
1teaspoonsalt
1smallcauliflower head
71ggreen onion(1 cup chopped)
5slicesbacon
110gshredded cheese
Instructions
Cook bacon if you aren't using bacon crumbles. Slice up green onion, shred cheese, and chop cauliflower head
Preheat oven to 400°F
Beat egg into cheddar soup. If you make my cheddar sauce still use the egg and add salt as well.
Combine chopped cauliflower and cheddar soup base. Then toss in the rest of the ingredients leaving out the shredded cheese.
Spread in baking dish and pat it down evenly. Spread shredded cheese across the top then place in oven for 30-40 minutes or until cheese is browned.
Allow to cool then serve

Store bought cheese sauce makes this super easy but you can make your own with this recipe.
Mixing cheeses or changing it up from the standard sharp cheddar is best. I used gruyere because I like the flavor and it's different. Not to mention I sprinkled a little goat cheese as well for added flavor.
Add chicken for more protein or even to make this a stand alone dish that doesn't need a side dish.
If you'd like to skip chopping of the cauliflower try frozen cauliflower rice.
