For a thicker broth you can add in flour or use a little tomato paste. Flour will thicken the broth without changing the flavor but tomato paste will add a tomato feel.

For flour, add two tablespoons mixed into the veggies before adding in the broth.

For tomato paste, mix in and cook a little with the veggies before adding the broth. Measure out about three ounces for this ham and cabbage soup recipe.

During the holidays this is the perfect soup to use with leftover ham. Simply swap out the diced ham for leftover ham and make according to the directions. Ham salad is also another great recipe for leftover ham.

Making the ham and cabbage soup

  1. First, prep all the ingredients and have them close by before you start cooking.
  2. In a pot, toss in the dice onion, minced garlic, sliced carrots and cook until they are soft and fragrant.
  3. Now, add in the ham then pour in the chicken broth. Then, add in the Italian seasoning. You can season with salt and pepper lightly but it’s best to wait until the end.
  4. Bring the broth to a boil then lower to a simmer.
  5. Then, add the chopped cabbage on top of the broth then cover with the lid. Coo on medium heat covered for 20 minutes. Halfway through mix the cabbage around.
  6. Lastly, when the cabbage is withered and before serving taste for salt and pepper and add a little acidity in the soup with a lemon or apple cider vinegar.

  • 1/2 head cabbage, sliced
  • 1 pound cubed ham
  • 1 cup carrots, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cup chicken broth
  • 1 tablespoon Italian seasoning
  • salt & pepper to taste
  • 1 lemon, juiced (sub with 1 TB apple cider vinegar)
