  • The best chicken is to buy and chop up a rotisserie chicken from the grocery store or the restaurant. This will make the recipe easy and the chicken will be full of flavor.
  • You can swap out the blue cheese for ranch dressing. In a recipe prior I used ranch seasoning to enhance the flavor of the chicken dip and it was a hit at the get together.
  • The crockpot is only to heat the ingredients through. Be sure to place the crockpot on a warm setting and stir occasionally while serving to keep the cheese from burning to the sides of the dish.

  1. First, pull the chicken from the bones and remove the skin. Roughly chop up the chicken. You’ll need two pounds for this recipe of chopped chicken.
  2. In the crockpot add the chopped chicken, room temp cream cheese, dressing, buffalo sauce and salt to taste. Mix everything together really well.
  3. Cover the crockpot and cook on high for 1 hour.
  4. After and hour add in the shedded cheese. It is best to shred your own but pre-shredded cheese can work for this recipe. Add in the shredded cheese then cover the crockpot for another 30 minutes.
  5. Next, the crockpot buffalo dip is ready. Give everything a good stir then place the crockpot on the warm setting for serving.

One reason this can happen is pre-shredded cheese. Mentioned above, pre-shredded cheese is ok for the recipe. But, that doesn’t mean it doesn’t come without consequences. There is a powder or dusting of a starch to prevent the cheese from sticking together. It also prevents the cheese from melting together as well. And we added with other ingredients it disrupts the melting of everything causing fat to pool rather than mix in with everything.

Another way to prevent this is less fat and more protein. In this recipe I did not have any issues. So, following the recipe step by step neither should you.

What to do if buffalo chicken dip is too runny?

Add more chicken to bulk things up. Sounds like the ratios are off with the chicken, sauces and cheeses. The chicken is what give it the bulking effect. The worse thing to do is add more cheese or sauce in this situation.
