  • Red & green bell pepper
  • Onion
  • Cooking oil
  • Seasoning salt

Quick tip for the best potatoes

Do not skip the rotating. With sheet pan recipes like this it’s easy for one side to start to burn due to the high heat. Especially the veggies when they aren’t moved around. This can take away from the caramelization that we are all after in cooking. One side will be almost burnt the other portions have a slight flavor of being boiled.

Making the country style potatoes on the sheet pan

  1. Preheat the oven to 400F.
  2. Next, wash the skins of the potato then pat dry. Dice the potato up and leave the skin on. Also, dice the onion, green and red bell pepper.
  3. Now, toss the diced ingredients into a bowl and cover with oil. Then, add the seasoning salt. Toss all the ingredients with the oil and seasoning.
  4. Now, on a sheet pan add a little oil or spray oil across the pan. Add the seasoned country potatoes.
  5. Have a pan large enough where the potatoes are not super crowded. Now, place the sheet pan in a preheated oven.
  6. Bake for 10 minutes then shake and move around the potatoes and peppers. Allowing them to flip and change positions. Place the pan back in the oven.
  7. Bake another 10 minutes. Now, check to see the doneness of the potatoes and peppers. If they are just slightly browned you can go another 5-10 minutes depending on how hot your oven is cooking. If they look like the photos they are done and don’t push it to avoid burning.
  8. Allow the country potatoes to cool a bit before serving. A classic topping is ketchup.

Best potatoes to use for the recipe

I have found using russet is best for this recipe. However, Yukon has a very buttery, tender flavor and texture and they work just as well. Whatever potato you use be sure to leave the skin on.
