How To Make Sheet Pan Steak Fajitas
Ingredients needed
- Flank, skirt or sirloin steak
- Onion
- Bell peppers (combination of yellow, red, green or orange)
- Lime
- Fajita seasoning (listed below)

Helpful tips for the best recipe
- Flank and sirloin steak are very lean cuts and you will need to prepare them properly. More than likely the steak will end up well done. To get tender pieces you have to cut the steak against the grain. When cutting with the grain the tendons all flow together making each bit tougher. But, when cutting against the grain you separate those tenders making very tender bites.
For a visual, here is a great video demonstrating just that.
- The bell peppers you choose are only important for you. Green tends to have a more earthy flavor and the other bell peppers vary in sweetness. A mix of at least 3 will help balance out all the flavors in your sheet pan steak fajitas.
- In the photos, the steak is medium-rare plus. I left the steak whole and baked for only 15 minutes. Removed the steak then cooked the peppers and onions for an additional 15 minutes. This is a good guide for how well you like your steak cooked.
Making the sheet pan steak fajitas recipe
- First, slice all the bell peppers and the mix together the fajita seasoning. You can also purchase a fajita seasoning from the store if you don’t have all the individual spices. Preheat the oven to 400F.
- Now, do not cut the steak before cooking. Thin pieces in the oven will cook super fast and you’ll have dry meat. Note, if you want a steak that’s not well done you’ll need to pull it out earlier than the cook time and leaving the veggies to finish cooking.
- Seasoning the steak with the fajita seasoning first. Then, with a little oil toss the sliced bell peppers and onions in the remaining seasonings. Layer everything in the sheet pan. Then, bake for 25 minutes.
- Remove the sheet pan and squeeze a lime over the ingredients. Serve with you favorite tortillas and maybe even a little Mexican rice.
Frequently Asked Questions (FAQs)
What kind of steak is used for fajitas?
Normally, you’ll see sirloin, flank or skirt being used in fajitas. I notice flank steak used in most Mexican restaurants. Personal choice is the most important because I love using skirt steak. It’s a bit more marbled than the others which means it’s going to have slightly more flavor.
Do you cut the steak before making the fajitas?
No and please do not do this. If you slice the steak the cooking time will drop a ton for the steak itself. When the 25 minutes are up those thin strips will be dry and tough. Keep the steak whole this way the steak cannot cook fast. To add, if you want a steak under well done pull the steak earlier and let the bell peppers and onions continue to cook.
