Next, wash the skins of the potato then pat dry. Dice the potato up and leave the skin on. Also, dice the onion, green and red bell pepper.
Now, toss the diced ingredients into a bowl and cover with oil. Then, add the seasoning salt. Toss all the ingredients with the oil and seasoning.
Now, on a sheet pan add a little oil or spray oil across the pan. Add the seasoned country potatoes.
Have a pan large enough where the potatoes are not super crowded. Now, place the sheet pan in a preheated oven.
Bake for 10 minutes then shake and move around the potatoes and peppers. Allowing them to flip and change positions. Place the pan back in the oven.
Bake another 10 minutes. Now, check to see the doneness of the potatoes and peppers. If they are just slightly browned you can go another 5-10 minutes depending on how hot your oven is cooking. If they look like the photos they are done and don’t push it to avoid burning.
Allow the country potatoes to cool a bit before serving. A classic topping is ketchup.
