Country Potatoes

Country potatoes made right in the oven on a sheet pan for a perfectly easy dish with bell peppers, onions and caramelized, tender potatoes.

Ingredients

  • 1.5 pound potatoes, diced
  • 1/2 medium red bell pepper, diced
  • 1/2 medium green bell pepper, diced
  • 1/2 medium yellow onion, diced
  • 2 tablespoon cooking oil
  • 1 tablespoon seasoning salt

Instructions

  • Preheat the oven to 400℉.
  • Next, wash the skins of the potato then pat dry. Dice the potato up and leave the skin on. Also, dice the onion, green and red bell pepper.
  • Now, toss the diced ingredients into a bowl and cover with oil. Then, add the seasoning salt. Toss all the ingredients with the oil and seasoning.
  • Now, on a sheet pan add a little oil or spray oil across the pan. Add the seasoned country potatoes.
  • Have a pan large enough where the potatoes are not super crowded. Now, place the sheet pan in a preheated oven.
  • Bake for 10 minutes then shake and move around the potatoes and peppers. Allowing them to flip and change positions. Place the pan back in the oven.
  • Bake another 10 minutes. Now, check to see the doneness of the potatoes and peppers. If they are just slightly browned you can go another 5-10 minutes depending on how hot your oven is cooking. If they look like the photos they are done and don’t push it to avoid burning.
  • Allow the country potatoes to cool a bit before serving. A classic topping is ketchup.
